A window into the Tuscan Hills

and the Beautiful Art of Olive Oil Making

Elixir Vitae’s Tuscan Premium EEVO is produced from olive trees on the hills of Poggio del Fattore magnificent estate

located in Val D’Ambra, in the Province of Arezzo, nestled in between Florence and Siena, the estate borders the DOP Chianti geographical region

Elixir Vitae’s Tuscan Premium EEVO is produced from olive trees growing in a microclimate at an elevation of 450 meter on the rocky soils

environmental conditions creating natural stress for the trees contribute to olive oil with a more complex, unique profile and higher antioxidant content

Elixir Vitae’s Tuscan Premium EEVO comes from autochthonous plants, mainly of the Moraiolo variety, one of the cultivars yielding the highest amount of polyphenols

Varietals composition of our EEVO :

70% Moraiolo

25% Frantoio

5% Pendolino, Maurino and Leccino

Unlike large productions, our olives are harvested by hand in small batches. This ensures that the olives are carefully handled in small containers, avoiding damage and are milled within less than 24 hours

~0.1% Acidity

~2.56 meq/kg Peroxides

~440 mg/kg Polyphenols

Chemistry In Perspective

By law extra virgin olive oil needs to have an acidity of 0.8% or less, and perodixe oxygen per kg of oil of less than 20, above this level olive oil can not be labeled as “extra” virgin. Chianti Classico DOP a geographic region where the famous wine is produced has more stringent criteria. Typically though the highest quality EVOOs comfortably beat these minimum thresholds. Elixir Vitae’s Tuscan Premium is clearly in this elite group.
